White Cheddar and Spinach Chicken Burgers

Ingredients
  

1 lb ground chicken

1 cup fresh spinach, finely chopped

1 cup shredded white cheddar cheese

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped onion

2 cloves garlic, minced

1 egg

1 tsp Dijon mustard

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp red pepper flakes (optional for a kick)

Olive oil (for cooking)

Burger buns and desired toppings (lettuce, tomato, etc.)

Instructions
 

In a large bowl, combine the ground chicken, chopped spinach, white cheddar, breadcrumbs, chopped onion, minced garlic, egg, Dijon mustard, salt, black pepper, and red pepper flakes (if using). Mix everything until just combined, being careful not to overwork the meat.

    Divide the mixture into 4 equal parts and shape them into patties. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.

      Heat a tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, add the patties to the skillet, cooking in batches if necessary.

        Cook the burgers for about 5 to 6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F).

          While the burgers are cooking, you can toast the burger buns if desired.

            Once cooked, remove the burgers from the skillet and let them rest for a couple of minutes.

              Assemble the burgers on the toasted buns with your choice of toppings, such as lettuce, tomato, avocado, or a spicy mayo.
