2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 cup homemade or store-bought basil pesto

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp red pepper flakes (optional)

Salt and pepper to taste

Olive oil for drizzling

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bean Mixture: In a large mixing bowl, combine the drained white beans, minced garlic, salt, pepper, and red pepper flakes if using. Gently mash half of the beans with a fork or potato masher to create a creamy texture while keeping some whole for added bite.

      Combine with Pesto: Add the pesto to the bean mixture and stir until well combined.

        Add Vegetables: Gently fold in the halved cherry tomatoes and fresh spinach until they are evenly distributed throughout the mixture.
