Ingredients

1 ½ pounds ground beef

1 cup mashed potatoes (instant or homemade)

1 large egg

1 cup shredded sharp cheddar cheese

½ cup cooked and crumbled bacon

1 small onion, finely chopped

2 cloves garlic, minced

1 cup breadcrumbs

¼ cup milk

1 tablespoon Worcestershire sauce

2 teaspoons dried parsley

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika

½ cup green onions, sliced (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.

Prepare the Bacon: Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet, crumble, and set aside.

Mix Ingredients: In a large mixing bowl, combine the ground beef, mashed potatoes, egg, cheddar cheese, crumbled bacon, onion, garlic, breadcrumbs, milk, Worcestershire sauce, parsley, salt, pepper, and smoked paprika.

Shape the Meatloaf: Mix the ingredients until just combined, being careful not to overmix. Transfer the mixture to the prepared loaf pan and shape it into a loaf.

Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C) and the meatloaf is cooked through.

Rest and Garnish: Remove the meatloaf from the oven and let it rest for 10 minutes. Garnish with sliced green onions before serving.

Serve: Slice the meatloaf and serve it warm, possibly with extra mashed potatoes or a green salad on the side.
