Tuscan Chicken Pasta Recipe

8 oz fettuccine pasta

2 boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach leaves

1/2 cup sun-dried tomatoes, chopped (in oil)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Cook the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken pieces, seasoning with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and sun-dried tomatoes, cooking for an additional 3-4 minutes until the tomatoes begin to soften.

        Create the Sauce: Reduce the heat to low, then pour in the heavy cream, stirring to combine. Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is creamy. If the sauce is too thick, add the reserved pasta water a little at a time until desired consistency is reached.

          Combine Ingredients: Add the cooked chicken and spinach to the skillet, stirring to combine. Cook for another 3-4 minutes until the spinach wilts and everything is heated through.

            Combine with Pasta: Add the cooked fettuccine to the skillet, tossing everything together until the pasta is well coated in the creamy sauce. Adjust seasoning with additional salt and pepper if needed.

              Serve: Plate the Tuscan chicken pasta, garnish with fresh basil, and a sprinkle of extra Parmesan cheese if desired. Enjoy!
