4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

½ cup soy sauce

¼ cup brown sugar

2 tablespoons ginger, grated

2 cloves garlic, minced

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Marinate the Chicken: In a bowl, combine pineapple juice, soy sauce, brown sugar, ginger, and garlic. Mix well. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour or up to overnight for maximum flavor.

    Prep the Glaze: In a small saucepan, heat olive oil over medium heat. Pour in the marinade (reserve the chicken) and bring to a simmer. Stir occasionally to prevent burning.

      Thicken the Glaze: Once simmering, add the cornstarch slurry to the saucepan, stirring continuously until the sauce thickens (about 2-3 minutes). Remove from heat and set aside.

        Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and lightly season with salt and pepper. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

          Glaze the Chicken: In the last couple of minutes of cooking, brush the thickened glaze over the chicken, allowing it to caramelize slightly.
