Ingredients

2 lbs boneless, skinless chicken thighs

1 medium onion, sliced

4 cloves garlic, minced

2 medium tomatoes, chopped

2 chipotle peppers in adobo sauce, chopped

1 tsp smoked paprika

1 tsp ground cumin

1 tsp dried oregano

1 cup chicken broth

2 tbsp olive oil

Salt and pepper, to taste

Corn tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

Simmer with Spices: Add the chopped tomatoes, chipotle peppers, smoked paprika, ground cumin, and oregano to the skillet. Stir to combine, and let it cook for another 3-4 minutes until the tomatoes soften.

Add Chicken and Broth: Place the chicken thighs into the skillet, season with salt and pepper, and pour in the chicken broth. Bring the mixture to a gentle simmer, then cover and cook for about 20-25 minutes, until the chicken is cooked through and tender.

Shred the Chicken: Remove the chicken from the skillet and let it cool slightly. Once cool enough to handle, shred the chicken using two forks. Return the shredded chicken to the skillet and stir to coat it with the sauce. Let it simmer uncovered for another 5-10 minutes to absorb more flavors.

Warm the Tortillas: In a separate skillet, heat the corn tortillas over medium heat for about 1 minute on each side until they are warm and pliable.

Assemble Tacos: To build the tacos, place a generous amount of the chicken tinga mixture onto a warmed tortilla. Top with fresh cilantro and a squeeze of lime juice.

Serve: Enjoy your Chicken Tinga Tacos with lime wedges on the side!
