2 cups cooked chicken breast, chopped

1 cup romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup canned black beans, drained and rinsed

1 cup corn kernels (canned or frozen)

1 avocado, diced

½ cup red onion, finely chopped

½ cup bell pepper (any color), diced

1 cup shredded cheddar cheese

½ cup cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Tortilla chips, for serving (optional)

Instructions
 

In a large salad bowl, combine the chopped chicken, romaine lettuce, cherry tomatoes, black beans, corn, avocado, red onion, bell pepper, and cheddar cheese.
