Ingredients

For the Sweet and Spicy Honey Pepper Chicken:

4 boneless, skinless chicken thighs

1/2 cup honey

2 tablespoons soy sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon black pepper

2 cloves garlic, minced

1 tablespoon apple cider vinegar

1 tablespoon olive oil

Salt to taste

Fresh chopped cilantro for garnish

For the Creamy Macaroni Cheese:

8 ounces elbow macaroni

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk

1 teaspoon Dijon mustard

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper to taste

1/4 cup breadcrumbs (optional, for topping)

Instructions

Step 1: Prepare the Chicken Marinade

In a bowl, whisk together the honey, soy sauce, sriracha, black pepper, minced garlic, apple cider vinegar, olive oil, and a pinch of salt.

Add the chicken thighs to the bowl, ensuring they are fully coated in the marinade. Cover and let marinate for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).

        Step 2: Cook the Macaroni

In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Step 3: Make the Cheesy Sauce

In the same pot, melt the butter over medium heat. Once melted, sprinkle in the flour, whisking continuously for about 2 minutes to create a roux.

Gradually add the milk while whisking to avoid lumps. Continue to cook until the mixture thickens and bubbles gently, about 5 minutes.

Stir in the Dijon mustard, garlic powder, onion powder, salt, and black pepper.

Remove the pot from the heat, and add the cheddar and mozzarella cheese, stirring until melted and smooth.

Step 4: Combine Macaroni and Cheese

Fold the cooked macaroni into the cheese sauce until well combined. If desired, pour into a baking dish, sprinkle breadcrumbs on top, and broil for a few minutes until golden brown and bubbly.

                          Step 5: Cook the Chicken

Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later.

Cook the chicken thighs for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F) and slightly caramelized. In the last few minutes of cooking, brush the reserved marinade onto the chicken for extra flavor.

                                Step 6: Serve

Remove the chicken from the heat and let it rest for a few minutes before slicing.

Serve the Sweet and Spicy Honey Pepper Chicken on a plate alongside a generous portion of Creamy Macaroni Cheese. Garnish the chicken with fresh cilantro.
