2 large red onions, thinly sliced

2 tablespoons sumac

1 teaspoon salt

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1 tablespoon honey or maple syrup (optional)

Fresh herbs (mint, parsley, or cilantro), chopped for garnish

Freshly cracked black pepper, to taste

Instructions
 

In a large mixing bowl, combine the thinly sliced red onions and salt. Toss well and let them sit for about 15-20 minutes to draw out excess moisture and soften.

    After the onions have released some moisture, rinse them under cold water and drain well. Pat them dry with a clean kitchen towel.

      In a separate bowl, whisk together the olive oil, fresh lemon juice, sumac, and honey or maple syrup if using. Mix until well combined.

        Add the drained onions to the bowl with the dressing. Toss everything together until the onions are well-coated with the dressing.

          Taste and adjust seasoning with freshly cracked black pepper, adding more salt or sumac if desired.

            Let the sumac onions marinate for at least 30 minutes at room temperature, allowing the flavors to meld. For best results, refrigerate for a few hours or overnight.

              Before serving, give the marinated onions a good stir and garnish with freshly chopped herbs.
