2 large red onions, thinly sliced

3 tablespoons olive oil

2 tablespoons sumac

1 tablespoon apple cider vinegar

1 teaspoon honey (or maple syrup for a vegan option)

Salt, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large bowl, combine the sliced red onions with a pinch of salt. Let them sit for about 10 minutes. This will help to soften the onions and draw out some of their moisture.

    In a smaller bowl, whisk together the olive oil, sumac, apple cider vinegar, honey, and a pinch of salt until well combined.

      Add the dressing to the onions and toss everything together until the onions are completely coated.

        Let the sumac onions marinate for at least 30 minutes at room temperature or in the refrigerator for up to 2 hours for deeper flavor.
