Steak & Cheese Dirty Fry Burritos

1 lb sirloin steak, thinly sliced

2 cups frozen French fries, cooked until crispy

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 medium onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon taco seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

Optional toppings: sour cream, guacamole, salsa, hot sauce, and chopped cilantro

Instructions
 

Marinate the Steak: In a bowl, combine the sliced sirloin steak with taco seasoning, smoked paprika, salt, and pepper. Let it marinate for at least 15 minutes to enhance the flavors.

    Cook the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and bell pepper. Sauté for about 5 minutes until they are soft and translucent. Add minced garlic and cook for an additional minute. Remove from skillet and set aside.

      Sear the Steak: In the same skillet, add the marinated steak slices. Cook for 3-5 minutes until they are browned and cooked to your preferred doneness. Remove from heat and combine with the cooked vegetables.

        Prepare the Fries: In a separate bowl, combine the crispy French fries with half of the cheddar cheese and half of the Monterey Jack cheese. Toss to blend the cheese with the fries.

          Assemble the Burritos: Lay a flour tortilla flat on a clean surface. Add a generous amount of the steak and vegetable mixture in the center, followed by a portion of the cheesy fries. Top with the remaining cheese. Fold the sides of the tortilla over the filling and then roll it up tightly from the bottom.

            Grill the Burritos: Heat a non-stick skillet or grill over medium heat. Place the rolled burritos seam side down and cook for about 3-4 minutes on each side until they are golden brown and crispy.
