Spinach and Feta Quesadillas (20 minutes)

Ingredients
  

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup mozzarella cheese, shredded

4 large flour tortillas

1 tablespoon olive oil

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon red pepper flakes (optional)

Sour cream or Greek yogurt, for serving

Salsa, for serving

Instructions
 

Sauté Spinach and Garlic: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for about 1 minute or until fragrant. Add the chopped spinach, season with salt and pepper, and sauté until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.

    Mix Cheese Filling: In a mixing bowl, combine the wilted spinach and garlic mixture with crumbled feta and shredded mozzarella. If you like a bit of heat, add the red pepper flakes. Stir until well combined.

      Assemble Quesadillas: Place one flour tortilla on a flat surface. Spread a generous portion of the spinach and cheese mixture on half of the tortilla. Fold the tortilla in half to create a semi-circle. Repeat with the remaining tortillas and filling.

        Cook Quesadillas: Wipe the skillet clean and return it to medium heat. Place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side or until the tortillas are golden brown and crispy, and the cheese has melted. You may need to cook them one or two at a time, depending on your skillet size.

          Serve: Remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges. Serve with sour cream or Greek yogurt and salsa on the side.
