Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 large jalapenos, finely chopped (seeds removed for less heat)

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup chicken broth

1/2 cup sour cream

1/4 cup fresh cilantro, chopped (for garnish)

Juice of 1 lime

Instructions

Marinate the Chicken: In a bowl, combine the olive oil, chopped jalapenos, minced garlic, smoked paprika, cumin, chili powder, salt, and black pepper. Mix well to create a spice paste. Rub this mixture generously over the chicken breasts, making sure they are well-coated. Let them marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours for more flavor.

Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken breast and sear for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove from the skillet and set aside on a plate.

Prepare the Sauce: In the same skillet, pour in the chicken broth and bring to a simmer, scraping up any bits stuck to the bottom of the pan. Stir in the sour cream and lime juice, mixing until smooth. Let it simmer for another 2-3 minutes to thicken slightly.

Combine and Serve: Return the chicken to the skillet, coating it with the creamy jalapeno sauce. Allow the chicken to heat through for about 2 minutes.

Garnish: Remove from heat, sprinkle with fresh cilantro, and serve immediately with your choice of side (rice, tortillas, or a fresh salad).
