8 oz. wide rice noodles (or egg noodles)

4 tablespoons vegetable oil

6 cloves garlic, minced

1-2 red chili peppers, thinly sliced (adjust to taste)

2 tablespoons soy sauce

1 tablespoon oyster sauce (or vegetarian alternative)

1 tablespoon chili paste or Sriracha (adjust to taste)

1 tablespoon sesame oil

1 teaspoon sugar

1 green onion, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Fresh cilantro (for garnish, optional)

Instructions
 

Prepare the Noodles: Cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process, then set aside.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.

      Sauté Garlic and Chilies: Once the oil is hot, add the minced garlic and sliced chili peppers. Stir-fry for about 30 seconds or until fragrant, being careful not to burn the garlic.
