Ingredients

4 boneless, skinless chicken thighs

1 can (14 oz) coconut milk

2 tablespoons olive oil

1 large onion, finely chopped

4 cloves garlic, minced

1-2 teaspoons red pepper flakes (adjust for spice preference)

1 tablespoon fresh ginger, grated

1 bell pepper (red or yellow), diced

1 cup diced tomatoes (fresh or canned)

1 tablespoon lime juice

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions

Marinate the Chicken: Place the chicken thighs in a bowl. Add ½ cup of coconut milk, lime juice, salt, and pepper. Mix well and let marinate for at least 30 minutes. This step enhances the flavor and tenderness of the chicken.

Sauté Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and sauté for about 5 minutes, or until translucent.

Add Garlic and Ginger: Stir in the minced garlic and grated ginger to the skillet and cook for another 1-2 minutes until fragrant.

Cook the Chicken: Add the marinated chicken thighs to the skillet. Sear for about 5-7 minutes on each side until browned.

Add Spices and Veggies: Sprinkle in the red pepper flakes and mix well. Then add the diced bell pepper and tomatoes, stirring to combine.

Combine with Coconut Milk: Pour in the remaining coconut milk and bring the mixture to a gentle simmer. Cook for 15-20 minutes, stirring occasionally, until the chicken is cooked through and the sauce is thickened.

Adjust Seasoning: Taste the sauce and adjust salt, pepper, or additional spice to your preference.

Garnish and Serve: Once done, remove from heat and garnish with fresh cilantro. Serve the spicy Brazilian coconut chicken over rice or with warm crusty bread to soak up the delicious sauce.
