1.5 lbs chicken thighs, boneless and skinless

1 can (14 oz) coconut milk

2 tablespoons olive oil

1 large onion, chopped

4 cloves garlic, minced

2-3 fresh red chili peppers, sliced (adjust to taste)

1 tablespoon fresh ginger, grated

1 tablespoon ground cumin

1 tablespoon paprika

1 teaspoon turmeric powder

1 tablespoon brown sugar

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Marinate the Chicken: In a large bowl, combine the chicken thighs with lime juice, cumin, paprika, turmeric, brown sugar, salt, and pepper. Mix well and let it marinate for at least 30 minutes (or overnight in the refrigerator for more flavor).
