2 large ripe bananas, mashed

1 cup all-purpose flour

1/2 cup milk (dairy or non-dairy)

1 large egg

1 tablespoon sugar (adjust to taste)

1 teaspoon baking powder

1/2 teaspoon cinnamon

A pinch of salt

1/2 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

Oil for frying (vegetable or coconut oil)

Maple syrup or honey for drizzling (optional)

Instructions
 

In a large mixing bowl, mash the ripe bananas with a fork until smooth, leaving a few chunks for texture.

    Add the egg, milk, sugar, and vanilla extract to the mashed bananas and mix until well combined.

      In another bowl, whisk together the flour, baking powder, cinnamon, and salt.

        Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. If using, fold in the chopped nuts.

          Heat about 1/2 inch of oil in a large skillet over medium heat. To test if the oil is ready, drop a small spoonful of batter into the oil; it should sizzle upon contact.

            Using a tablespoon, drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the skillet. Fry for about 2-3 minutes on each side or until golden brown and crispy.

              Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.

                Serve warm, drizzled with maple syrup or honey if desired.
