Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup sour cream

2 tablespoons mayonnaise

1 tablespoon lime juice

1 teaspoon chili powder

Pinch of salt

For the Bowls:

2 cups cooked quinoa or rice

1 large avocado, sliced

1 cup cherry tomatoes, halved

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions
 

Prepare the Shrimp:

    - In a medium bowl, combine the olive oil, chili powder, smoked paprika, garlic powder, lime juice, salt, and pepper.

      - Add the shrimp to the bowl and toss until well coated. Let them marinate for about 15 minutes.

        Make the Mango Salsa:

          - In a separate bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside.

            Prepare the Lime-Chili Sauce:

              - In a small bowl, whisk together sour cream, mayonnaise, lime juice, chili powder, and a pinch of salt until smooth.

                Cook the Shrimp:

                  - Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they turn pink and are cooked through. Remove from heat.

                    Assemble the Bowls:
