Sheet Pan Sausage and Veggies

1 pound Italian sausage (sweet or spicy, your choice)

2 cups baby potatoes, halved

1 bell pepper (red, yellow, or green), sliced

1 zucchini, sliced into half-moons

1 red onion, cut into wedges

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Preheat Your Oven: Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment paper for easier cleanup.

    Prepare the Veggies: In a large bowl, combine the halved baby potatoes, sliced bell pepper, zucchini, and red onion. Drizzle with olive oil, and add minced garlic, dried oregano, paprika, salt, and pepper. Toss everything together until the veggies are evenly coated.

      Add the Sausage: Slice the Italian sausages into 1-inch pieces and add them to the bowl with the vegetables. Toss again to combine all the ingredients well.

        Spread on Sheet Pan: Transfer the mixture to the prepared sheet pan, spreading it out in a single layer for even cooking.

          Bake: Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender and slightly caramelized, stirring halfway through for even roasting.

            Garnish and Serve: Remove from the oven and let it cool for a minute. Garnish with freshly chopped parsley before serving.
