2 cups cooked jasmine rice (preferably day-old)

1 lb boneless chicken thighs, diced

3 tablespoons soy sauce

2 tablespoons mirin

1 tablespoon sake (optional)

1 tablespoon sesame oil

1 tablespoon vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1 onion, finely chopped

2 carrots, diced

1 red bell pepper, diced

1 cup frozen peas

2 large eggs, beaten

4 green onions, finely sliced

Salt and pepper to taste

Toasted sesame seeds (for garnish)

Nori (seaweed) strips (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken with soy sauce, mirin, and sake. Let it marinate for at least 15-30 minutes for rich flavor absorption.

    Prep the Stir-Fry: Heat a large wok or non-stick skillet over medium-high heat. Add 1 tablespoon of vegetable oil. Once hot, add the marinated chicken and stir-fry for about 5-7 minutes until fully cooked. Remove the chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil, followed by the garlic and ginger. Stir-fry for about 30 seconds until fragrant. Add the chopped onion, carrots, and red bell pepper. Stir-fry for another 3-4 minutes until the vegetables are tender.

        Add Rice: Increase the heat to high and add the cooked jasmine rice to the skillet. Use a spatula to break up any clumps and mix well with the vegetables. Drizzle in sesame oil and mix again.

          Incorporate Chicken and Eggs: Add the cooked chicken back into the pan along with the frozen peas. Push the rice to the side and pour the beaten eggs into the cleared area. Scramble the eggs until they are just set, then mix everything together.

            Season: Add salt, pepper, and additional soy sauce to taste. Incorporate the sliced green onions and stir until well combined.

              Garnish and Serve: Transfer the fried rice to serving plates and garnish with toasted sesame seeds and nori strips.
