Salmon Crispy Rice

For the Crispy Rice:

2 cups sushi rice

2 1/2 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

Vegetable oil (for frying)

For the Salmon Topping:

1 pound sushi-grade salmon, skin removed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon lemon juice

1 teaspoon grated ginger

1 avocado, thinly sliced

2 green onions, chopped

Black sesame seeds (for garnish)

For the Spicy Mayo:

1/4 cup mayonnaise

1 tablespoon sriracha (or to taste)

1 teaspoon lime juice

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low, covering and simmering for 20 minutes until all the water is absorbed. Remove from heat and let it sit, covered, for an additional 10 minutes.

    Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice, being careful not to mash the grains. Allow the rice to cool completely.

      Form and Fry Crispy Rice: Once cooled, take a small amount of rice and mold into 1-inch squares. Heat vegetable oil in a skillet over medium-high heat. Carefully place the rice squares in the hot oil, frying until golden and crispy, about 3-4 minutes on each side. Use a slotted spoon to drain on paper towels.

        Prepare the Salmon Topping: Dice the salmon into small cubes. In a bowl, combine soy sauce, sesame oil, lemon juice, and grated ginger. Add the diced salmon and gently toss to coat. Allow marinating for about 10 minutes.

          Make the Spicy Mayo: In a small bowl, mix mayonnaise, sriracha, and lime juice until smooth. Adjust the sriracha according to your spice preference.

            Assemble the Crispy Rice: On each piece of crispy rice, place a generous spoonful of the marinated salmon. Top with a slice of avocado, a sprinkle of black sesame seeds, and chopped green onions.

              Serve: Drizzle a bit of spicy mayo on top of each crispy rice bite and serve immediately while they are warm and crispy.
