2 salmon fillets (about 6 oz each)

1 cup orzo pasta

2 cups vegetable broth or water

1 tablespoon olive oil

1 tablespoon butter

3 cloves garlic, minced

1 lemon (zested and juiced)

1 cup cherry tomatoes, halved

1 cup spinach or arugula

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Cook the Orzo: In a large skillet, bring the vegetable broth (or water) to a boil. Add the orzo and a pinch of salt. Reduce the heat and let it simmer, stirring occasionally, for about 8-10 minutes or until al dente. Once cooked, drain any excess liquid if needed, and set aside.

    Sear the Salmon: In the same skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for an additional 2-3 minutes, or until cooked through. Remove the salmon from the skillet and set aside.

      Create the Base: In the same skillet, reduce the heat to medium. Add the butter and let it melt. Stir in the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to blister.
