1 lb (450g) boneless, skinless chicken breasts, cubed

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

4 cups (950ml) low-sodium chicken broth

1 cup (240ml) heavy cream

1 lemon, zested and juiced

24 oz (680g) potato gnocchi (store-bought)

2 cups (150g) fresh spinach

1 cup (100g) cherry tomatoes, halved

1/2 cup (50g) grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed chicken and season with salt, pepper, thyme, and oregano. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook the Aromatics: In the same pot, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.

      Build the Base: Pour in the chicken broth, heavy cream, lemon zest, and lemon juice. Stir to combine, bringing the mixture to a gentle simmer.

        Add the Gnocchi: Stir in the gnocchi and let it cook in the broth for about 3-5 minutes until they float to the top and become tender.

          Finishing Touches: Return the cooked chicken to the pot along with the fresh spinach and cherry tomatoes. Stir until the spinach wilts and everything is evenly incorporated, about 2-3 minutes.
