One Pot French Onion Pasta

12 oz. pasta (like fettuccine or linguine)

3 large onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable broth (or beef broth for a richer flavor)

1 cup heavy cream

1 cup grated Gruyère cheese

1 cup grated Parmesan cheese

2 tbsp unsalted butter

2 tbsp olive oil

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Onions: In a large pot or deep skillet, heat the olive oil and butter over medium heat. Add the sliced onions and sauté for about 15-20 minutes, stirring occasionally until they become golden brown and caramelized. This step builds the flavor base for your dish.

    Add Garlic: Stir in the minced garlic and fresh thyme. Cook for another 1-2 minutes until fragrant.

      Combine Ingredients: Add the uncooked pasta to the pot, followed by the vegetable broth. Stir well to combine all the ingredients.
