2 cups crushed pineapple, drained

1 cup heavy whipping cream

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup crushed graham crackers (about 10 full sheets)

1/2 cup unsweetened shredded coconut

1/2 cup chopped walnuts (optional)

Fresh pineapple slices, for garnish

Whipped cream, for topping

Prepare the Base: In a medium mixing bowl, combine the crushed graham crackers, shredded coconut, and chopped walnuts (if using). Mix well until combined.

    Make the Cream Cheese Mixture: In another large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully combined and creamy.
