2 cups rotini or penne pasta

1 lb boneless, skinless chicken breasts

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon paprika

Salt and black pepper to taste

1 tablespoon olive oil

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, finely chopped

1 cup Kalamata olives, pitted and sliced

1 cup crumbled feta cheese

½ cup fresh parsley, chopped

¼ cup balsamic vinegar

¼ cup olive oil

1 tablespoon Dijon mustard

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with oregano, garlic powder, paprika, salt, and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the skillet, let cool, then slice or dice into bite-sized pieces.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cooked chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.

        Make the Dressing: In a separate bowl, whisk together balsamic vinegar, olive oil, and Dijon mustard until well combined. Season with salt and pepper to taste.

          Toss the Salad: Pour the dressing over the pasta salad and toss gently to combine all ingredients thoroughly.
