2 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup low-sodium chicken broth

1 cup heavy cream

½ cup sun-dried tomatoes, julienned

1 cup spinach, fresh

½ cup grated Parmesan cheese

8 ounces fettuccine pasta

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve ½ cup of the pasta water and drain the rest. Set the pasta aside.

    Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet over medium heat, heat olive oil. Add the chicken and sauté for about 6-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and let it rest on a plate.

      Make the Sauce: In the same skillet, add the minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
