2 boneless, skinless chicken breasts

8 ounces fettuccine or pasta of your choice

1 cup heavy cream

1 cup sun-dried tomatoes, chopped

1 cup spinach, fresh or frozen

1 cup grated Parmesan cheese

4 cloves garlic, minced

1 teaspoon Italian seasoning

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Sear the Chicken: Season both sides of the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté briefly until fragrant (about 30 seconds). Pour in the heavy cream and bring to a gentle simmer. Stir in the sun-dried tomatoes, spinach, and Italian seasoning. Let the mixture cook for 3-4 minutes until the spinach has wilted and the sauce is heated through.

        Combine Ingredients: Slice the seared chicken into strips and return to the skillet. Add the cooked pasta and grated Parmesan cheese. Toss everything together until the pasta is well-coated in the creamy sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld.
