Ingredients
  

1 medium head of cauliflower (or 4 cups riced cauliflower)

2 tablespoons olive oil

1 cup mushrooms, sliced (button or cremini work well)

2 cups fresh spinach, roughly chopped

2 cloves garlic, minced

1 small onion, chopped

1 teaspoon dried thyme

Salt and pepper to taste

¼ cup parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Cauliflower Rice: If using a whole head of cauliflower, remove the leaves and stem. Cut it into florets and pulse in a food processor until it resembles rice grains. If using pre-riced cauliflower, skip this step.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until softened. Then add the minced garlic and sliced mushrooms. Sauté for another 5-7 minutes until the mushrooms are tender and browned.

      Add the Cauliflower Rice: Stir in the cauliflower rice and cook for about 5 minutes, stirring occasionally until it's heated through and slightly tender.

        Include Spinach and Seasoning: Add the chopped spinach, dried thyme, salt, and pepper to the skillet. Cook for an additional 3-4 minutes, until the spinach is wilted and everything is well combined.

          Finish with Cheese (Optional): If desired, sprinkle the parmesan cheese over the mixture and stir until melted to add creaminess and flavor.

            Serve: Remove from heat and garnish with fresh parsley before serving.
