Ingredients

4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

2 teaspoons Italian seasoning

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon lemon juice

Cooking spray or olive oil for drizzling

Fresh parsley for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.

Prepare Chicken: Pat the chicken breasts dry with paper towels. If they are very thick, you can pound them to an even thickness for even cooking.

Make Mixture: In a medium bowl, mix together the grated Parmesan cheese, panko breadcrumbs, Italian seasoning, garlic powder, salt, and black pepper. This will form your crunchy coating.

Prepare Coating: In another bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until smooth and well combined. This will help the crust adhere to the chicken.

Coat Chicken: Dip each chicken breast into the mayonnaise mixture, ensuring it's fully coated. Next, dredge the chicken in the Parmesan breadcrumb mixture, pressing firmly to ensure the coating sticks well.

Arrange on Baking Sheet: Place the coated chicken breasts on the prepared baking sheet. Drizzle a little olive oil over the tops or spray with cooking spray to help them crisp up while baking.

Bake: Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C) and the crust is golden brown.

Serve: Remove from the oven and let rest for a few minutes. Garnish with fresh parsley if desired before serving. Enjoy your homemade Longhorn Parmesan Crusted Chicken!
