8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

3 cups fresh spinach, washed and roughly chopped

4 cloves garlic, minced

1 lemon (zest and juice)

1/4 cup extra virgin olive oil

1/4 cup white wine (optional)

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (for topping)

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant. Immediately add the shrimp, season with salt and pepper, and cook until they turn pink and opaque, about 2-3 minutes per side. If using, pour in the white wine and let simmer for 2 minutes.

      Add Spinach: Once the shrimp is cooked, add the chopped spinach to the skillet and stir until it wilts down, about 1-2 minutes.

        Combine Everything: Add the cooked pasta, lemon juice, and lemon zest to the skillet with the shrimp and spinach. Toss everything together gently, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

          Serve: Plate the pasta and shrimp mixture. Sprinkle with grated Parmesan cheese and garnish with fresh parsley. Serve immediately.
