Lemon Basil Pasta Salad - Plant Based RD

8 oz whole wheat pasta (fusilli or penne works great)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, diced (any color)

½ cup red onion, thinly sliced

1 cup fresh basil leaves, torn

½ cup Kalamata olives, pitted and sliced

¼ cup nutritional yeast (for a cheesy flavor)

Zest of 1 lemon

Juice of 1 lemon

3 tbsp extra virgin olive oil

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool completely.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl. Add the torn basil leaves and sliced olives to the bowl.

      Make the Dressing: In a small bowl, whisk together the nutritional yeast, lemon zest, lemon juice, olive oil, salt, and pepper until well combined.

        Combine: Add the cooled pasta to the bowl with the vegetables and toss to mix everything evenly. Pour the dressing over the pasta salad and gently toss to ensure every ingredient is coated.

          Taste and Adjust: Taste the salad and adjust the seasoning with more salt, pepper, or lemon juice if desired.

            Chill & Serve: Allow the pasta salad to chill in the refrigerator for about 30 minutes before serving. This will enhance the flavors. Serve cold or at room temperature.
