Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

1/4 cup grated ginger

2 cloves garlic, minced

2 green onions, finely chopped

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp gochugaru (Korean red pepper flakes)

1 tbsp honey

1 tsp salt

1 tsp black pepper

1 egg, beaten

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp Sriracha (adjust to taste)

1 tsp lemon juice

1 tsp sesame oil

1 tsp honey (optional, for sweetness)

1 tsp chopped green onions (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large bowl, combine the ground beef, breadcrumbs, grated ginger, minced garlic, chopped green onions, soy sauce, sesame oil, gochugaru, honey, salt, black pepper, and beaten egg. Mix well until all the ingredients are fully incorporated.

      Form the Meatballs: With your hands, shape the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them on the prepared baking sheet, spaced evenly apart.

        Bake the Meatballs: Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and nicely browned on the outside.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, in a small bowl, combine the mayonnaise, Sriracha, lemon juice, sesame oil, and honey (if using). Stir until smooth and well mixed. Adjust the Sriracha to your desired level of spiciness.

            Serve: Once the meatballs are done, remove them from the oven and let them cool slightly. Serve warm alongside the spicy mayo dip, garnished with chopped green onions.
