Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or ground pork)

1/2 cup cooked jasmine rice

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tbsp ginger, freshly grated

1/4 cup soy sauce

1 tbsp sesame oil

1 tbsp brown sugar

1 tsp black pepper

1 egg, lightly beaten

1/4 cup breadcrumbs

Sesame seeds for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tbsp gochujang (Korean chili paste)

1 tsp lemon juice

1 tsp garlic powder

Salt, to taste

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Meatball Mixture: In a large mixing bowl, combine the ground beef (or pork), cooked rice, green onions, minced garlic, grated ginger, soy sauce, sesame oil, brown sugar, black pepper, beaten egg, and breadcrumbs. Mix everything together thoroughly until well combined.

      Form Meatballs: Using your hands, form the mixture into small meatballs, about 1 inch in size. Place the formed meatballs on the prepared baking sheet, spaced evenly apart.

        Bake Meatballs: Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and golden brown on the outside.

          Make Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, mix together the mayonnaise, gochujang, lemon juice, garlic powder, and salt. Adjust the seasoning to taste. Set aside in the refrigerator until ready to serve.
