1 cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk (or milk with 1 tablespoon of vinegar)

2 cups peeled and diced apples (preferably Granny Smith or Honeycrisp)

½ cup packed brown sugar (for topping)

1 tablespoon ground cinnamon (for topping)

Optional: ½ cup chopped walnuts or pecans for added crunch

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

      In another bowl, combine the melted butter, eggs, vanilla extract, and buttermilk. Beat until the mixture is smooth.

        Slowly pour the wet mixture into the dry ingredients, gently folding until just combined. Be careful not to overmix – some lumps are okay.

          Fold in the diced apples, and if using, the chopped walnuts or pecans.

            In a small bowl, mix the brown sugar with the tablespoon of cinnamon to create a topping mixture.

              Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle the brown sugar cinnamon topping generously over each muffin.

                Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
