1 cup buttermilk

1 teaspoon vanilla extract

2 cups peeled and diced apples (Granny Smith or Honeycrisp work wonderfully)

½ cup brown sugar (for topping)

1 teaspoon ground cinnamon (for topping)

¼ cup chopped walnuts or pecans (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them lightly.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, and salt until well combined.

      Mix Wet Ingredients: In another bowl, whisk the eggs until frothy. Add the melted butter, buttermilk, and vanilla extract. Mix well.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix—the batter should be lumpy.
