2 cups all-purpose flour

1 cup apple cider

3/4 cup granulated sugar

1/4 cup light brown sugar, packed

1/2 teaspoon baking soda

1 tablespoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1/2 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or butter.

      Prepare the Apple Cider Reduction:

        In a small saucepan, bring the apple cider to a boil over medium heat. Reduce the heat to low and simmer until the cider reduces to about 1/2 cup, approximately 10-15 minutes. Let it cool slightly.

          Mix the Dry Ingredients:

            In a large bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.

              Combine the Wet Ingredients:

                In another bowl, whisk together the melted butter, granulated sugar, brown sugar, egg, vanilla extract, and the reduced apple cider until smooth.

                  Combine Wet and Dry Ingredients:

                    Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; some lumps are okay.

                      Fill the Donut Pan:

                        Spoon or pipe the batter into the prepared donut pan, filling each cavity about 3/4 full.

                          Bake the Donuts:

                            Bake in the preheated oven for 10-12 minutes or until a toothpick inserted in the center comes out clean. Let the donuts cool in the pan for about 5 minutes before transferring them to a wire rack.

                              Prepare the Coating:

                                In a small bowl, combine 1/2 cup granulated sugar and 1 teaspoon ground cinnamon.

                                  Coat the Donuts:

                                    While the donuts are still warm, roll each one in the cinnamon-sugar mixture to coat thoroughly.
