Honey Lime Chicken & Avocado Rice Stack

Ingredients
  

2 boneless, skinless chicken breasts

1/4 cup honey

1/4 cup fresh lime juice

Zest of 1 lime

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup jasmine or basmati rice, uncooked

2 ripe avocados, diced

1/4 cup chopped fresh cilantro

1/2 cup cherry tomatoes, halved

1/4 teaspoon red pepper flakes (optional)

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, mix the honey, lime juice, lime zest, olive oil, garlic powder, salt, and pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

    Cook the Rice: Rinse the rice under cold water until the water runs clear. In a pot, combine the rice with 2 cups of water and a pinch of salt. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is cooked and water is absorbed. Fluff with a fork and set aside.

      Grill the Chicken: Preheat a grill or a grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Let the chicken rest for 5 minutes before slicing.

        Prepare the Avocado Rice: In a large bowl, combine the cooked rice, diced avocados, chopped cilantro, cherry tomatoes, and red pepper flakes (if using). Gently mix to combine, being careful not to mash the avocados.
