Honey Garlic Butter Roasted Carrots

Ingredients
  

1 lb baby carrots (or whole carrots, peeled and cut into sticks)

3 tablespoons unsalted butter

4 tablespoons honey

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a small saucepan, melt the butter over medium heat. Once melted, add the honey, minced garlic, and thyme. Stir well and bring to a simmer for about 2-3 minutes until fragrant. Remove from heat.

      In a large mixing bowl, combine the carrots, salt, and pepper. Pour the honey garlic butter mixture over the carrots and toss until they are evenly coated.

        Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.

          Roast in the preheated oven for 20-25 minutes, stirring halfway through, until carrots are tender and slightly caramelized.

            Once done, remove from the oven and let cool for a few minutes. Drizzle any remaining honey garlic butter from the pan over the carrots.

              Garnish with chopped parsley before serving.
