High Protein Ground Turkey Stuffed Sweet Potato

2 medium sweet potatoes

1 lb ground turkey

1 small onion, diced

2 cloves garlic, minced

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup diced tomatoes (canned or fresh)

1 avocado, diced (for topping)

Fresh cilantro, chopped (for garnish)

½ cup shredded cheese (cheddar or mozzarella, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash and pierce the sweet potatoes with a fork. Rub a little olive oil on them and sprinkle with salt. Place them on a baking sheet and bake for about 45 minutes, or until tender.

      Cook the Ground Turkey Filling: In a large skillet over medium heat, add a drizzle of olive oil. Once heated, add the diced onions and sauté for 2-3 minutes until they turn translucent. Add the minced garlic and stir for another minute.

        Add Ground Turkey: Increase the heat to medium-high and add ground turkey to the skillet. Cook for about 5-7 minutes, breaking it apart with a spatula until browned and cooked through. Drain any excess fat if necessary.

          Mix in Beans and Corn: Stir in the black beans, corn, diced tomatoes, cumin, paprika, salt, and pepper. Cook for an additional 5-7 minutes, allowing all the flavors to meld together.

            Assemble the Stuffed Sweet Potatoes: Once the sweet potatoes are cooked, remove them from the oven and carefully slice them in half lengthwise. Gently scoop out a bit of the flesh to create space for the filling, leaving some around the edges for structure.

              Stuff the Potatoes: Fill each sweet potato half with the turkey mixture. If desired, sprinkle shredded cheese on top and return them to the oven for another 5-10 minutes, just until the cheese is melted.

                Garnish and Serve: Remove from the oven and top with diced avocado and fresh cilantro. Serve warm.
