For the Hibachi Chicken:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 cloves garlic, minced

1 teaspoon ginger, minced

1 tablespoon brown sugar

Salt and pepper, to taste

1 tablespoon chopped green onions (for garnish)

For the Fried Rice:

3 cups cooked jasmine rice (preferably day-old)

2 tablespoons vegetable oil

2 large eggs, beaten

1 cup mixed vegetables (peas, carrots, and corn)

3 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon garlic powder

Salt and pepper, to taste

2 tablespoons chopped green onions (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the soy sauce, sesame oil, minced garlic, minced ginger, brown sugar, salt, and pepper. Add the chicken pieces and marinate for at least 30 minutes in the refrigerator.

    Prepare the Fried Rice:

      - Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.

        - Add the mixed vegetables and cook for about 2-3 minutes until they are tender.

          - Push the vegetables to one side of the skillet, pour in the beaten eggs, and scramble until fully cooked. Mix the eggs with the vegetables.

            - Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir in soy sauce, sesame oil, garlic powder, salt, and pepper. Cook for another 3-5 minutes, stirring occasionally to heat through.

              - Remove from heat and set aside.

                Cook the Chicken:

                  - In a separate skillet or grill pan over medium-high heat, add 1 tablespoon of vegetable oil.
