Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 zucchini, diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn kernels, drained

1 can (15 oz) diced tomatoes with green chilies

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

8 small corn tortillas, cut into strips

1 cup shredded low-fat cheese (cheddar or Mexican blend)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 4-5 minutes.

    Stir in the minced garlic, diced bell pepper, and zucchini. Sauté for another 3-4 minutes until the vegetables are tender.

      Add the black beans, corn, diced tomatoes (with their juices), chili powder, cumin, smoked paprika, salt, and pepper to the skillet. Stir well to combine.

        Allow the mixture to simmer for about 5 minutes, letting the flavors meld together.

          Gently fold in the tortilla strips until they are well coated with the mixture. Spread the mixture evenly in the skillet.

            Sprinkle the shredded cheese on top, cover the skillet, and let it cook for an additional 5-7 minutes until the cheese is melted and bubbly.

              Remove the skillet from the heat and garnish with fresh cilantro. Serve with lime wedges on the side.
