Hawaiian Shoyu Chicken

2 pounds chicken thighs (bone-in, skin-on)

1 cup shoyu (soy sauce)

1 cup brown sugar

1/2 cup rice vinegar

1/4 cup honey

1 tablespoon fresh ginger, minced

4 cloves garlic, minced

1/2 teaspoon black pepper

1 teaspoon sesame oil

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine shoyu, brown sugar, rice vinegar, honey, ginger, garlic, black pepper, and sesame oil. Stir until the sugar is dissolved. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Prepare for Baking: Remove the chicken from the marinade, reserving the marinade for later. Place the chicken thighs skin-side up in a roasting pan.

        Bake the Chicken: Bake the chicken thighs uncovered for about 25 minutes.

          Baste the Chicken: After 25 minutes, take the reserved marinade and pour it over the chicken. Continue baking for another 20-25 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is caramelized.

            Rest and Garnish: Once done, remove the chicken from the oven and let it rest for 5 minutes. Garnish with chopped green onions and sesame seeds before serving.
