Ground Turkey Teriyaki Stir Fry

Ingredients
  

1 lb ground turkey

2 cups broccoli florets

1 bell pepper (red or yellow), sliced

1 medium carrot, julienned

3 cloves garlic, minced

1-inch piece of ginger, grated

1/4 cup soy sauce (low sodium preferred)

2 tbsp honey or maple syrup

1 tbsp rice vinegar

1 tbsp sesame oil

1 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa for serving

Instructions
 

Prepare the Sauce: In a small bowl, combine soy sauce, honey, rice vinegar, sesame oil, and grated ginger. Mix well and set aside.

    Cook the Turkey: In a large skillet or wok over medium-high heat, add the ground turkey. Cook, stirring occasionally, until browned and fully cooked, about 5-7 minutes. Break apart with a spatula as it cooks.

      Add Garlic and Vegetables: Stir in the minced garlic, broccoli florets, sliced bell pepper, and julienned carrot. Cook for an additional 4-5 minutes or until the vegetables are tender-crisp.

        Incorporate the Sauce: Pour the teriyaki sauce over the turkey and veggies. Stir to combine and allow it to simmer for a couple of minutes.

          Thicken the Sauce: Slowly add the cornstarch slurry, stirring continuously until the sauce thickens and coats the stir fry, about 1-2 minutes.

            Garnish and Serve: Remove from heat. Serve the stir fry over cooked rice or quinoa and garnish with sliced green onions and sesame seeds.
