Ingredients

1 pound ground turkey

2 medium sweet potatoes, diced

1 small onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup fresh spinach

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon oregano

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Fresh herbs (parsley or cilantro) for garnish

Instructions

Prepare the Sweet Potatoes: Start by peeling and dicing the sweet potatoes into small cubes. This will ensure they cook evenly and quickly.

Cook the Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey, breaking it apart with a spatula. Season it with salt, pepper, smoked paprika, and cumin. Cook until browned and cooked through, about 5-7 minutes. Once cooked, transfer to a plate and set aside.

Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and red bell pepper. Sauté for 3-4 minutes, until the onion becomes translucent. Then add the minced garlic and cook for an additional minute until fragrant.

Incorporate Sweet Potatoes: Add the diced sweet potatoes to the skillet. Stir well to combine with the onions and peppers. Cook for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender and slightly caramelized.

Combine Ingredients: Return the cooked ground turkey back to the skillet. Add the fresh spinach and balsamic vinegar. Stir everything together and let it cook for another 2-3 minutes, allowing the spinach to wilt and the flavors to meld.

Adjust Seasoning: Taste and adjust salt and pepper if necessary.

Serve: Garnish with fresh herbs like parsley or cilantro before serving. Enjoy your delicious Ground Turkey Sweet Potato Skillet hot!
