Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup onion, chopped

2 cloves garlic, minced

1 cup spinach, chopped (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

1 tsp ground cumin

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/2 cup shredded mozzarella cheese (optional)

1/4 cup sour cream or Greek yogurt (optional)

1 tbsp olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: In a large pot, bring salted water to a boil. Add diced sweet potatoes and cook for about 10 minutes or until tender. Drain and set aside.

      Cook the Ground Turkey: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until fragrant.

        Brown the Turkey: Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.

          Combine Ingredients: Stir in the chopped spinach, diced tomatoes, cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach is wilted.

            Layer the Casserole: In a greased 9x13-inch casserole dish, layer the cooked sweet potatoes evenly at the bottom. Pour the ground turkey mixture over the sweet potatoes, spreading it out evenly.

              Add Toppings: If using, sprinkle the shredded mozzarella cheese on top of the turkey mixture. For extra creaminess, dollop the sour cream or Greek yogurt across the surface.

                Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
