For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Corn Salsa:

1 cup sweet corn (fresh or frozen)

1 medium red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt

2 tablespoons mayonnaise

2 garlic cloves, minced

1 tablespoon lemon juice

Salt and pepper to taste

For the Bowl:

2 cups cooked rice (white, brown, or quinoa)

1 ripe avocado, diced

Lime wedges for serving

Fresh cilantro for garnish

Instructions
 

Prepare the Shrimp: In a bowl, combine the shrimp, olive oil, smoked paprika, garlic powder, cumin, salt, pepper, and lime juice. Mix well to coat. Let marinate for about 15-20 minutes.

    Make the Corn Salsa: In a mixing bowl, combine sweet corn, diced red bell pepper, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Stir gently and set aside for the flavors to meld.

      Prepare the Creamy Garlic Sauce: In another bowl, mix together Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste and refrigerate until ready to use.
