For the Grilled Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional)

Salt and pepper to taste

Juice of 1 lime

For the Avocado:

1 ripe avocado, diced

Juice of 1/2 lime

Salt to taste

For the Corn Salsa:

1 cup fresh corn kernels (or frozen, thawed)

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt or sour cream

2 tablespoons mayonnaise

2 garlic cloves, minced

1 tablespoon lemon juice

Salt and pepper to taste

For Serving:

Cooked rice or quinoa

Fresh lime wedges

Extra cilantro for garnish

Prepare the Marinade for Shrimp: In a large bowl, combine olive oil, minced garlic, smoked paprika, cayenne pepper (if using), lime juice, salt, and pepper. Add the shrimp and toss to coat. Let marinate for at least 15 minutes.

    Make the Corn Salsa: In a separate bowl, combine fresh corn, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper. Mix well and set aside to let the flavors meld.

      Prepare the Creamy Garlic Sauce: In another bowl, mix together Greek yogurt (or sour cream), mayonnaise, minced garlic, lemon juice, salt, and pepper until creamy and well combined. Adjust seasoning to taste.

        Grill the Shrimp: Preheat a grill or grill pan over medium-high heat. Once hot, thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for about 30 minutes beforehand).
