1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil, plus extra for drizzling

2 tablespoons lemon juice

1 clove garlic, minced

1/2 teaspoon cumin

Salt and pepper to taste

1/2 cup Greek yogurt

1 cup diced cucumber

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1/4 cup red onion, finely diced

1/2 cup feta cheese, crumbled

Fresh parsley for garnish

Instructions
 

Make the Hummus Base: In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, cumin, salt, and pepper. Blend until smooth, adding a tablespoon or two of water if needed for a creamier consistency. Taste and adjust seasoning as necessary.

    Prepare the Vegetable Topping: In a separate bowl, combine the diced cucumber, halved cherry tomatoes, sliced Kalamata olives, and diced red onion. Mix well and set aside.

      Assemble the Loaded Hummus: Spread the hummus evenly on a large platter or in a shallow bowl. Top with the Greek yogurt, then generously layer the vegetable mix over it.

        Add Feta and Drizzle: Sprinkle the crumbled feta cheese on top and drizzle with additional olive oil for extra flavor.

          Garnish: Finally, sprinkle some fresh parsley over the top as a garnish and serve immediately.
