1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-15 minutes, or until fork-tender. Drain and set aside.

    Sear the Steak: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steak cubes in a single layer (you may need to do this in batches to avoid overcrowding). Season with salt and pepper. Sear for about 2-3 minutes on each side, or until desired doneness is reached. Remove the steak from the skillet and set aside.

      Make Garlic Butter: In the same skillet, reduce the heat to medium, and add the butter. Once melted, add the minced garlic, rosemary, and thyme, stirring frequently for about 1-2 minutes, until fragrant.

        Combine Ingredients: Add the cooked potatoes to the skillet and toss gently to coat them in the garlic butter mixture. Then, add the seared steak bites back into the skillet, and toss everything together until heated through, about 2-3 minutes. Taste and adjust seasoning as needed with additional salt and pepper.
